Commodity recipe: Asparagus & cheesy bacon casserole

  • 1 bunch of Robinson Fresh Asparagus
  • 6 strips bacon, cut into 1 inch pieces
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 1/2 cup milk
  • 1/2 cup heavy cream
  • 1 cup shredded white cheddar, divided
  • 1 cup crushed Ritz Crackers
  • 1 cup shredded Gruyère, divided
  • Kosher salt
  • Freshly ground black pepper
  • Crushed red pepper flakes
  • 1 cup crushed Ritz Crackers

Instructions

  • Preheat oven to 375°F.
  • Cook bacon in a skillet over medium heat until crispy (about 10 minutes). Drain on a paper towel-lined plate.
  • Remove all but 1/4 cup of bacon grease from the skillet.
  • Add garlic to the skillet and cook for 1 minute.
  • Stir in flour and cook until golden (about 2 minutes).
  • Slowly whisk in milk and cream until smooth. Simmer until thickened (about 5 minutes).
  • Stir in 1/2 cup each of cheddar and Gruyère until melted.
  • Crumble bacon and add to the sauce and season with salt, pepper, and red pepper flakes.
  • Place asparagus in a 9”x13” baking pan and pour sauce over it.
  • Top with remaining cheese and crushed Ritz Crackers.
  • Cover with foil and bake for 20 minutes.
  • Remove foil and bake for another 10 minutes until cheese is melted.
